Banana Crazy

It’s been a banana crazy household lately. Sometimes I go through phases of buying stuff at the grocery store with good intention of eating it all. Sometimes at the end of the week I’m left with food that’s gone bad.

Luckily, when it comes to bananas they’re so versatile! In the past few weeks I’ve tried two different banana bread recipes. Both have been absolutely amazing.

I’m happy to share with you the links to the recipes and urge you to check out the fantastic bloggers that created them!

First up, I tried Emily’s recipe for Blueberry Greek Yogurt Banana Bread. I had all the ingredients handy with the stars being the Greek yogurt and the 2-lb container of juicy blueberries I had on hand.

The batter, filled with plump juicy blueberries, made my mouth water.

The finished product was so perfectly golden and made the house smell of wonderful baked good.

We basically had blueberry banana bread for breakfast everyday. That’s fine by me. Once I find something I love (such as running), I dive right in.

Last night, I found myself with a couple of really black bananas. Of course I just had to find another recipe for good ol’ banana bread since I had no blueberries this time. Upon researching many different sites, I came upon Julie’s Healthy Banana Bread recipe.

What I liked about this was the use of whole wheat flour, apple sauce, and Greek yogurt. The nutrition on this definitely made it healthy.

On the running/workout front, this week I’m again increasing my running mileage slightly from 33 miles this past week.

Here’s my agenda for the week:

  • Monday: rest day
  • Tuesday: 5 mile run
  • Wednesday: 8 mile run + Underdog kickball game
  • Thursday: 5 mile run + 1st FlyBarre class
  • Friday: rest day
  • Saturday: 18 mile run in Eugene, OR. Tracktown USA and my hometown!
  • Sunday: cross-training TBD
  • I’m so very excited to head down to Eugene to visit my fam with Joe and the pup. My brother, Andrew, is in town for just a few more days so we’re exited to all hang out.

    Does anyone know of any good 18-mile running paths in Eugene? Have you tried any new fun workouts lately?
